Aurora Natural Peppermint Bark Granola Balls
Ingredients:
- 2 cups Aurora Natural Vanilla Crunch Granola
- 1/2 cup crushed peppermint candies (or candy canes)
- 1/4 cup mini chocolate chips (optional)
- 1/4 cup white chocolate chips
- 1/4 cup dark chocolate chips
- 1/2 cup sweetened condensed milk (or sticky sweetener like honey or maple syrup)
- 1/2 teaspoon peppermint extract
- 1/4 teaspoon vanilla extract
- A pinch of salt
For Coating:
- 1/2 cup white chocolate, melted
- 1/4 cup crushed peppermint candies
Instructions:
- Crush Granola:
- Place the granola in a food processor and pulse a few times until it’s coarsely crushed but not powdered.
- Mix Base Ingredients:
- In a large bowl, combine the granola, crushed peppermint candies, mini chocolate chips (if using), white chocolate chips, and salt.
- Add Sweetener and Flavor:
- Add the sweetened condensed milk (or sticky sweetener), peppermint extract, and vanilla extract. Mix well until the mixture sticks together when pressed.
- Shape into Balls:
- Scoop about a tablespoon of the mixture and roll it into balls with your hands. Place them on a parchment-lined baking sheet.
- Chill:
- Refrigerate the balls for about 20-30 minutes to firm up.
- Coat with White Chocolate:
- Melt the white chocolate in a microwave-safe bowl, heating in 15-20 second intervals and stirring in between until smooth.
- Dip each ball into the melted white chocolate, allowing excess to drip off.
- Decorate with Peppermint Crumbles:
- Sprinkle the dipped balls with crushed peppermint candies while the chocolate is still wet.
- Set and Serve:
- Let the coated balls set in the refrigerator for about 15-20 minutes. Serve chilled or at room temperature.
