Aurora Maple Harvest Granola Thanksgiving Stuffing

  • Ingredients:
  •  2 cups Aurora Maple Harvest Granola
  • 6 cups cubed bread (day-old bread works best, preferably whole wheat or multigrain)
  • 1 cup onion, diced
  • 1 cup celery, diced
  •  2 carrots, diced
  • 2 apples, peeled and chopped (Granny Smith or Honeycrisp for tartness)
  • 1/2 cup Aurora Natural dried cranberries or raisins
  • 1/2 cup Aurora Natural pecans or walnuts chopped
  • 1 tsp sage
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1/2 tsp ground cinnamon (optional, for a hint of sweetness)
  • Salt and pepper to taste
  • 3 tbsp butter(or olive oil)
  • 1 1/2 to 2 cups vegetable broth (or chicken broth for non-vegetarian)
  • Fresh parsley for garnish

Instructions:

1. Preheat the oven** to 350°F (175°C).

2. Prepare the bread cubes: Spread the cubed bread onto a baking sheet and lightly toast in the oven for about 10 minutes until just crisp. Set aside.

3. Sauté vegetables: In a large skillet, melt the butter (or heat olive oil) over medium heat. Add the onions, celery, and carrots. Cook for about 5–7 minutes until the vegetables are soft. Add apples and sauté for another 3 minutes.

4. Mix the ingredients: In a large mixing bowl, combine the toasted bread cubes, Aurora Maple Harvest Granola, sautéed vegetables and apples, dried cranberries, and chopped pecans. Sprinkle in sage, thyme, rosemary, cinnamon (if using), salt, and pepper. Stir well.

5. Add the broth: Slowly pour the vegetable or chicken broth into the mixture, a little at a time, stirring gently until everything is moistened but not soggy. The amount of broth may vary depending on how moist you like your stuffing.

6. Bake: Transfer the stuffing mixture into a greased 9×13-inch baking dish. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the top is golden brown.
