Vanilla Crunch Granola!

Ingredients:

  • 1 1/2 cups Aurora Natural Vanilla Crunch Granola
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened (Dairy-free substitute use vegan butter like Earth Balance)
  • 1/2 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup semi-sweet chocolate chips (Dairy-free substitute use dairy-free chocolate chips like Enjoy Life)

Method:

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, mix the flour, baking soda, and salt. Set aside.
  • In a large bowl, cream the softened butter with both sugars until smooth and fluffy.
    Add the egg and vanilla extract, mixing well.
  • Gradually mix the dry ingredients into the wet ingredients until fully combined.
  • Fold in the Aurora Natural Vanilla Crunch Granola and chocolate chips until evenly distributed.
  • Scoop the dough into tablespoon-sized balls and place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly with a spoon. 
  • Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
  • The cookies should be cooled on the baking sheet for 5 minutes before being transferred to a wire rack to cool completely.

Enjoy with milk or a milk substitute!
